Raw Vegan Cooking Seminar 15-17 July 2011

At the introductory course you will learn the basic principles of “apyro” diet and raw cuisine. You will learn methods of preparation and cooking of raw food recipes, and you will put this new knowledge into practice. The seminar is open to anyone interested in creating healthy, delicious dishes with live foods. Learn about the benefits of raw vegan diet and how raw cuisine can be easily incorporated into your daily life. Learn smart tips and delicious recipes that nourish body and soul. In this tutorial you will learn how to make milk from nuts and seeds, green juices, smoothies, milkshakes using raw organic products and superfoods.

Often when we hear about raw food the only thing that comes to our mind is lettuce leaves and carrots. In this seminar you will learn how to prepare meals that are fulfilling and good for our health. Learn how to create new textures and flavors, how to make a full meal salad and how to create delicious main dishes that give your body what it needs. Forget about eggs, the dreaded milk, gelatin and refined white sugar. The desserts will never be the same again. Learn how to prepare sweet creations using pure vegetable raw materials and satisfy your craving for sweet foods to which your body will be grateful.

The seminar will be presented by the raw food chef coach Veronica Timofeeva-Vlachaki.


1st day (Friday)

Lunch menu (prepared):Green salad with tahini sauce, linseed crackers with dip (“salmon paté” or hummus), wild rice with tomato sauce and carrot cake.
Seminar (1st part): Introduction to raw food diet and preparation of dishes. The recipes that will be presented at the first day of the seminar include: Puree of lentil sprouts, zucchini spaghetti with sauce and cheese, dip (tzatziki or “fish” roe salad), orange-almond cookies, linseed crackers, apple pie and sweet pancakes. Also, the recipes of our lunch menu will be discussed.
Dinner menu: Mashed lentils, zucchini spaghetti with sauce and cheese, dip (tzatziki or fish roe salad), linseed crackers and apple pie.

2nd day (Saturday)

Breakfast: almond milk, fruit marmalade (to be prepared on the spot), orange-almond cookies, sweet pancakes.
Seminar (2nd part): The recipes that will be presented during the second day include:Oatmeal burgers, cream of spinach soup, vegetable kebabs, pizza, ice cream, baklava, chocolate and muesli cookies.
Lunch menu: bulgur veggie burgers, vegetable kebabs, cream of spinach soup, ice cream.
Dinner menu: salad, pizza, baklavas.


3rd day (Sunday)

Breakfast: Muesli, almond or hazelnut milk, chocolate cookies.
Seminar (3rd part): The recipes that will be presented during the third day include: stuffed zucchini, almond “cheese” or stuffed tomatoes and peppers, stuffed avocado with cream "cheese", orange chocolate "cheesecake".
Lunch menu: stuffed zucchini, almond “cheese” or stuffed tomatoes and peppers, stuffed avocado with cream "cheese", orange chocolate "cheesecake".

Included:

Two or Three nights stay in Eumelia (*People are welcome to arrive on Thursday evening on the 14th of July and stay an extra night since the seminar begins on Friday at noon)

* Organic meals (all the produce is organic and depending on what is available and in season)
* Tour of Eumelia
* Workshop guidance by raw food chef Veronica Timofeeva-Vlachaki



Cost of Workshop:

1 person in a house 120 euro (housing) X 2 nights = 240 euro + 180 euro (Seminar fee & 3 meals per day) = 420 euro Total


2 people sharing a house, 60 euro per person (housing) X 2 nights = 120 euro + 180 euro (Seminar fee & 3 meals per day) = 300 euro Total each person

3 people sharing a house, 50 euro per person (housing) X 2 nights = 100 euro + 180 euro (Seminar fee & 3 meals per day) = 280 euro Total each person


4 people sharing a house, 40 euro per person (housing) X 2 nights = 80 euro + 180 euro (Seminar fee & 3 meals per day) = 260 euro Total each person


* In case someone wishes to arrive the night before the seminar begins on the 14th of July and stay the night we offer a discount of 20 percent on the cost of one night stay based on the above prices.
